March marked a special milestone at the Prince of Wales in Congleton – one full year since Lacy and Craig took the reins as tenants of this much-loved Joule’s Brewery pub. And what a year it’s been!
While this was their first official pub tenancy, Lacy and Craig are no strangers to Congleton or its pub scene. With years of hospitality experience under their belts and strong ties to the local community, the couple didn’t hesitate when the opportunity to take over the Prince of Wales came along. Their passion, energy, and local knowledge made them the perfect fit.
“When we saw the chance to run the Prince, we knew it was the right time and the right place. Working closely with the Joule’s team made the transition smooth, and we hit the ground running.”
With the support of the Joule’s Team, the site was turned around in record time, relaunching with renewed energy and a vision focused on hospitality, community, and consistency. They describe their working relationship with Joule’s Brewery as “A very strong and supportive partnership”
Lacy and Craig’s love for what they do shines through in everything – from the carefully planned events to the customer service they offer behind the bar. They’ve created a real sense of community and built something special that locals are proud to call their own.
More Than Just a Pub: A Community Hub
From day one, Lacy and Craig set out to create more than just a good pub – they wanted to build a local hub where everyone feels welcome. And they’ve done just that, they’ve transformed the Prince of Wales into a vibrant space full of activity, great beer, and a warm, personal touch that keeps customers coming back.
Here’s what they’ve introduced during their first year in tenancy:
- Introduction to Darts: Three thriving teams and congratulations to their A Team, who went on to win the league! A huge source of pride and community spirit.
- Homemade Pies: Freshly made by landlady Lacy herself every Saturday and Sunday. These comforting classics have become a weekend favourite for locals and visitors alike.
- Open Mic Nights: Hosted on the first and third Wednesday of every month – drawing talented performers from across the area and creating a midweek buzz in the pub.
- Frozen Green Monkey Pints: A cool twist on a brewery favourite. These frosty pints have become a talking point around town, putting a fun and memorable spin on the classic.
- Live music Every Saturday Night: The pub is regularly packed out for lively performances and dancing into the night.
- Active Involvement in Local Events: such as Congleton Unplugged and the Jazz and Blues Festival, putting the pub right at the heart of the town’s cultural calendar.

Looking Ahead: Bigger Plans, Same Community Spirit
With one successful year behind them, Lacy and Craig are only just getting started. They’ve already begun planning for the future. Their mission is to keep building the Prince of Wales as a key destination in Congleton, while staying true to its roots as a welcoming, character-filled local.
